Orchard-Style Tomatoes & Eggs (Shakshuka)
 
Products:
1kg of soft tomatoes or box of crushed tomatoes (800g); add some soft tomatoes; 1 large onion; 8-10 garlic cloves; olive oil with generosity; salt; ground black pepper; cumin; 6 eggs; "Galilean orchard mix – for vegetables and dishes" mixture.
 
Dish: wide and deep pan with lid.
 
Preparation:
Cut the onion into two and slice into thin slices; peel the garlic cloves and cut into thin slices; cut the tomatoes in half and take out the seeds; cut the tomatoes into large dice; pour olive oil into pan, add the onion and turn on the gas on a low fire; after 3-4 minutes, add the sliced garlic and fry for about two minutes; add the tomatoes, turn up the fire until boiling and bubbling are obtained; turn down the fire and cook for about 20 minutes; the liquid quantity should be checked; mix every few minutes; crumble by hand 2-3 tablespoons of the spicing mixture and add salt and ground black pepper; mix and cook for about 2 additional minutes on low fire; spread out the tomato mixture and break the eggs on top; spread a bit of cumin, salt, ground black pepper and a bit of the Orchard herbs – crumbled; put the lid on top but leave slightly open; cook until eggs are firm.
 
Diversification:
For lovers of spicy foods, it is recommended to add fresh or dried hot red pepper to the tomato mixture; spread Abraham spice on the eggs.

The Orchard Meal:

with Druze pitas or fresh black bread, butter, crushed olives, sliced cucumber, glass of anis or ouzo. That's it You're all set.
