Summer Lettuce Salad
A light summer salad that is right for heavy meaty meals as well as for light meals with spicy goat cheese. Wine is a must.
 
Products:
Arabian lettuce or several kinds of lettuce; 6 hard plums; handful of garden leaves; 1 green onion – 2 stems (not a must).
 
For the seasoning:
6 tablespoons of fine olive oil; 2 tablespoons of balsamic vinegar; 1 garlic clove; salt; ground pepper; 2 tablespoons of "Galilean orchard jam".
 
Preparation:
Mix all components of the seasoning and stay for thirty minutes; wash the lettuce, shake off the water remains and tear by hand; finely cut the garden leaves, plums and green onion; take out and throw the garlic; pour the seasoning and mix right before service.
 
Diversification:
Other hard fruits such as apricot, apple, pear; use "Galilean pear apple with spices" jam; decorate with pine nuts; spread on top a bit of Abraham spice.
 
The Orchard Meal: with meat on the fire, vegetable skews, tehina, tomato and parsley salad, quality red wine. Pitas for those who really insist on exploding.
